Spinach and Artichoke Pizza
As you can see I'm a bit of an artichoke fanatic. Throw a little bit of spinach and maybe a hint of garlic in the mix and I am in heaven. Now use all of that yumminess to top a whole grain pizza crust infused with a sun dried tomato pesto base and well lets just say, this pie never stood a chance! Pizza Fusion now takes the cake for creating my new favorite pizza combo. I can't wait to try recreating this in my own kitchen! Results to follow.
Angel Hair Pasta with Tomatoes and Artichokes
This is such a delicious pasta dish. I love it because it's not too heavy if you're in the mood for something light, and it is super easy to whip up in a hurry. All you need is about 5 ingredients and you're good to go.
You need 1 box of angel hair pasta, a can of diced tomatoes, 1 diced onion, one jar of artichokes in water, 1/2 tsp minced garlic, a pinch of sugar, your favorite shredded cheese and salt and pepper to taste.
Cook pasta according to package directions while browning onions in a pan with a touch of oil and the garlic. Cook over medium heat for about 3-4 minutes. Add artichokes and cook for an additional 2-3 min. Reduce heat to low and let simmer for about 10 minutes. I added a pinch of sugar to sweeten it a bit and a dash of salt and pepper.
Remove from heat and toss with cooked pasta. Top with shredded cheese and basil, if desired.
